Leafy Greens
Storage:
Kale: 2+ weeks in a bag in the fridge. Can remove ribs and chop to save space.
Spinach: 10 days in the fridge
Swiss Chard: 10+ days in a bag in the fridge. Can chop to save space.
Preserve: Blanch for 2 minutes and spread out on a sheet pan to cool. Freeze in serving sized portions. Best used within a year.
Tips:
Lacinato Kale is the best for soups.
Cook Swiss chard just like spinach! If you want to eat it raw, look for young, small leaves. Did you know you can eat the stems too!?
Quick Green Curry
Coconut milk
Green curry paste
Squash or sweet potato, cubed
Protein of your choice, I like chickpeas, but tofu or chicken would also be good.
Leafy greens like kale, swiss chard, or spinach
Rice, quinoa, or noodles
*For all ingredients, add as much or as little as you like. If you are making this meal for one, you'll need less of things than if you are making this meal for the whole family.
Get your grain cooking.
In another pot, put in some coconut milk and curry paste. Stir to mix, then add squash and cook until tender. When the squash is tender, add the greens and cook until wilted, but the colour is still bright. Serve over grain of choice.
Sauteed Greens with Onions, Garlic, and Tomatoes
Sautee an onion. When onion is translucent, add 3-4 cloves of minced garlic. After another minute add a chopped tomato and ½-1 bunch of kale. Cook a few minutes more until kale is wilted. This is excellent tossed with pasta, or just as a side dish.
